I think the recipes from villagers reset when someone leaves. I noticed after the leave animation when you left, a bunch of villagers (including Kitt) appeared in the town square where I was stood.

Interesting about the crafting, looks like Kitt is still doing it though on my second visit.  I've previously been open for a couple of hours with a number of visitors coming and going with the same villager crafting throughout, something does trigger it to change eventually though

 

This time I remembered my ladder!

The villager recipes shouldn't change. They keep doing it for a rough time period
