Vegetarian / Vegan recipes

Not a recipe but a couple of new vegan bits available. Both are on offer for £3 at tesco.

Richmond Sausages - texture wise they are spot on but they have no flavour
Roar Icecream - indistinguishable from icecream made with milk and amazing flavours.

Of those we've tried, the two we rate the highest are Linda McCartney's mozarella quarter pounders (not vegan, obviously) and "The Incredible Burger" from the Co-Op's Gro range (this one is vegan). Chuck them on the bbq frozen, and cook until they look good. We've yet to try Beyond or Impossible burgers, but these two grill and and bbq very well.

Beyond burgers are very good (I got them from Tesco). I haven't tried them barbecued but I've no reason to believe it wouldn't make them better still. I do like the Linda McCartney Mozzarella burgers too - they don't taste like any meat in particular, but are just super tasty and satisfying. Of the ones I've tried those 2 are far and away the best (I've yet to try Impossible or Iceland's No Bull burgers which I believe are highly-rated too). Where did you get the Moving Mountains one? My Sainsbury's only has their sausages, sausage burgers, and hot dogs (I've mentioned before that the sausages and hotdogs are absolutely fantastic though...)

My other half is dairy intolerant so we tried the vegan Magnums. We were very surprised at how nice they were, not just good for alternatives but a perfectly passable version.

 

What they really nailed was the ice cream, normally the dairy free stuff is nasty tasting vanilla water ice but this had a really thick creamy mouthfeel, just like a normal Magnum.


Only downside was the almost instant wind they induced in both of us, maybe the pea protein in the ice cream.

Was absolutely up for trying them until I read the words "really thick and creamy mouthfeel" and now I'm not sure I'll ever be able to eat anything again.

if it helps 'mouthfeel' is a widely used term in the food industry

I don't know if there's one place that has a list of the lot. I've found that most "standard" supermarket cheeses are vegetarian. By standard I mean packaged blocks of cheddar, Double Gloucester, etc., cottage cheese, regular mozzarella, feta and halloumi - that sort of thing. It's only when you look at some of the fancier ones where there's a good chance they won't be - some French cheeses, Spanish cheeses like Manchego and Iberico, top quality halloumi and feta etc. And Parmesan absolutely cannot be vegetarian.

 

However, if you're shopping in a particular supermarket you may be able to find their product lists. I used them the first year I did Veganuary. Here's a link to Sainsbury's list page (found by simply googling "Sainsburys vegetarian product list") - if you open up the veggie one and scroll down to page 12 it lists all the cheeses they stock that are suitable:

Interesting article about Germany cutting down on meat. A few interesting snippets, but the one that stuck was about people working in the agricultural and meat industries being considerably more interested in the future of lab-grown meat.

I think any fat will work - you just want something flavourless. I've deffo made one with vegetable oil before now that worked just fine. Milk-wise I'm not so sure. Again, I'm guessing you want something flavourless, and I'm not sure what's best for that. I only tend to buy oat milk, and that definitely tastes very oaty. Not sure if that's a bad thing though when it comes to bechamel (and I'm pretty sure it's fine to cook with).

 

(I've just realised I've not made a veggie lasagne or moussaka for absolutely ages. Will have to rectify that (my veggie moussaka is a thing of beauty).

Can I ask those who are dairy free, thoughts on vegan margarine? 

I'm planning to reduce the meat and dairy I eat in January so I'm doing a bit of research and prep with recipes. In my mind, margarine is a bit of a Frankenstein food fad from the low fat 80s and 90s - are the modern dairy free alternatives any better? Or am I better off using other products entirely (eg hummus or avocado for fresh bread?)

I use Naturli (which I think is exclusive to Sainsbury's supermarket-wise). The main benefit is that it's palm-oil free. The Flora one is pretty good too, and a fair bit cheaper. I'd probably use that if I got through a lot of the stuff, but a tub lasts me ages so I don't mind paying extra. I generally only use it for toast and the odd bit of cooking. For sandwiches I tend to lubricate them with Hellman's vegan mayo instead, which I'm a big fan of.

We had an incredible pot of ice cream, like the best I’ve had since home made stuff at family in Italy and was about to order it by the gallon when we spotted it wasn’t vegetarian.... this led me to look for what ice cream was veggie and was shocked that so much of it isn’t - especially the really good stuff and even Magnuns :blink:

 

My other half is veggie and I’m part time veggie but this is a game changer and something I didn’t think was a concern - who knew there was so much eel in ice cream....

 

Anyone recommend some decent veggie ice creams!?

Morrisons do a nice one called taste, vanilla, strawberry, or chocolate flavours. 

 

It may not be in the freezer section but in a small freezer in the free from aisle.

I've heard good things about a lot of the vegan ice creams - it seems to be one of the things that works really well. I've tried a sampler of the Alpro one and it was really good. Too sweet for my taste, but looking past that I doubt anyone could tell it wasn't dairy.

We like the Alpro ice creams. The chocolate swirl is good, but their mango is my favourite.
