Having very recently replayed it:

 

God of War II

 

This is up there with MGS3 in terms of "how the fuck did they pull this off on a PS2?!?"  If they added some accessibility options (those fucking random QTEs can fuck off!) and QoL improvements, along with a solid PS5 graphical upgrade, it would be phenomenal.

Wiz n Liz. Yeah you heard me.

 

Add some Dragon's Trap remake presentation, maybe some collection chain mechanics and lots more fruit combinations with newer meta/fourth wall/minigame hidden spells. Make the boss battles a sort of Typing of the Dead collect-the-right-letterathon. Add Puggsy as a hidden character.

Dragons Lair

The technology exists to render Dirk and all of Don Bluths wonderful characters and animation in a real time setting divorced from pure QTE, probably a good idea to update the premise from damsel in distress too.

 

Time Crisis

Full on VR reimagining. Extend the whole storyline and scenarios but keep the cheesy action movie feel and slightly cartoony aesthetic.
