Hot Sauce

To anyone with the infinity sauce, how hot do you find it? I've put a fairly decent splash of it on a Dorito and it didn't seem all that hot. Admittedly I haven't got the bollocks to drown it in the stuff, but I was quite surprised when it didn't blow my head off.

I figure this is the best place to ask, I'm on the hunt for some hot snacks to bring in to work, last year I had the Blaires crisps and the naga chilli jerky from martinmeats, what else would people suggest? I want something really hot.

I have encountered a small problem.

When I started going out with my now wife 10 years ago she was only used to Slavic and Scandinavian food.

I gradually introduced her to the British national dish, starting with Kormas and gradually working up the ladder.

Eventually she got to Jalfrezi, Madras and even Vindaloo strength meals without complaining.

Virtually every dish I cook has chilli in it so we are right up to speed.

Then I cooked a meal using a Morrisons Vindaloo, out of a bottle. And it was very silly strong. Almost like they got their recipe wrong.

So now the wife is nervous about strong curries when there is no need to be.

I just made my own hot sauce.

I had a load of small Asian green chilli's left over so I threw them in some water and vinegar and added a few cloves of garlic. Brought it up to the boil, added some salt and onion powder.

Now I have about 500ml of super hot sauce. Currently ifs a lot hotter than Nando's extra hot, but i'm hoping it will mellow out a bit over time

What I like about it is that it's green, whereas most sauces are red. Though there might be a good reason for that.

I just confused Sriracha with Chipotle, in a McDonalds order.

I like the former. They’re offering the latter, and this chocolate milkshake is doing nothing to stop the burn.

Doesn’t even taste of anything.

I've likely already mentioned it, but this is the pinacle of hot sauce:

It's quite thick with a real savoury umami and an decent but not overpowering level of heat, I put it on everything.

He makes some hotter ones if you want more of a burn (in ascending heat order)

Christ on a Bike

Holy Mary Mother of God

Judas Is Scary Hot

He makes rib meat rolls on Brick Lane and douses them in the sauce

He also spends a lot of time on Twitter calling Tories cunts, so gets additional points for that.

Isn't Sriracha hotter than Chipotle?

I instantly thought so too, but a quick google suggests not - chipotle (raw, versus being in a sauce which would dilute it somewhat) can be up to 10,000 scoville units, where sriracha sauce is up to 2,500 (generally less than a jalapeno).

That said, I don't think I've ever had a chipotle sauce with any kind of kick, so I'm intrigued by whatever McDonalds are giving out. Is it a sachet @SeanR or just within the food (I'm guessing it was in a wrap?)
