If you woke up tomorrow and had to work in a life of catering what would you be?

Restauranteur? Baker? Watercress Farmer? What food tickles your fancy as a job?

I would love to be a proper specialist salami and cured meat maker. I love all those dried meats hanging from the ceiling and have eaten enough to know that they can be both wonderful and dreadful, so I'd love to learn all the techniques, source the best ingredients and enjoy the science and art of making a top quality product.

Calm down dear, I'd be Michael Winner.

Make a few films then spend years travelling the world eating (and staying) in the best places. Then get to be a smug bastard writing about it in the Sunday Times. That's my ideal career in catering.
